Ingredients used in ANARDANA BHINDI
• Oil - as required.
• Cumin seeds - 1 tea spoon.
• Onions - 1 cup.
• Ginger - 1 tablespoon.
• Turmeric - 1/2 tea spoon.
• Salt - to taste.
• Bhindi(okra) pieces - 250 grams.
• Red chilly powder - 1 tea spoon.
• Pomegranate seed powder - 1 tea spoon.
• Tomatoes - 1 cup.
• Coriander leaves - 1/2 cup.
• Lime juice - 2 teaspoons.
Method:
  • Take some oil in a pan and when its hot add cumin seeds.
  • Add onions, ginger, turmeric, salt and cook for a minute.
  • Now add okra pieces and saute them. Let them cook for few minutes with lid on it.
  • After some time add red chilly powder, pomegranate seed powder and salt.
  • Mix it thoroughly and let it cook for a minute.
  • Add tomatoes, coriander leaves and lime juice.
  • Saute it for another 2-3 minutes and switch off the flame.

ANARDANA BHINDI

Bhindi Anardana is a unique, tangy and delicious recipe with pomegranate seed powder. Anardana Bhindi is a very simple and quick to prepare fry dish that taste extremely delicious with very little seasonings. This fry curry is made by frying some finely chopped onions and ginger, okra pieces added until they are just done and seasoned with salt, chilli powder and anardana (pomegranate) powder. A drizzle of lemon juice is giving that enhances the taste and zest of the dish. Bhindi or Okra is a very versatile vegetable that is cooked in many ways. Traditionally they added in making of stews, pulusu (tamarind gravy), stir fries or curries.

 

It is a very popular and extensively used vegetable among West Asians, North Indian and Pakistanis. In India, the okra is used for making stir fries (Okra fry), or added in the sambar or kadhi. In southern India, okra is cooked is a spicy and tangy tamarind sauce commonly known as Vendakai Okra Kozhambu. Often tamarind juice, amchur powder (dried mango powder) or anardana powder is added into the Okra dish giving an amazing tangy and sourness to the dish. Bhindi or okra is easily available all over the world. In different places this vegetable is also called by different names such as Ladies fingers, gombo, okoro, ochro, bhendi, bhindi, etc. to name a few.

Recipe:  Anardana Bhindi

  1. Bhindi pieces (Okra)                -       250 gms
  2. Oil                                                  -       2 tsp
  3. Cumin seeds                                -       1 tsp
  4. Onions                                         -       1 no
  5. Ginger                                          -       1 tsp
  6. Turmeric powder                       -       ½ tsp
  7. Salt                                                -       to taste
  8. Red chilli powder                      -       1 tsp
  9. Pomegranate seed pd               -       1 tsp
  10. Tomato                                        -       1 no
  11. Coriander leaves                       -       ½ bunch
  12. Lime juice                                   -       2 tsp

 

  1. Heat some oil in a pan when it gets hot, add cumin seeds.
  2. When cumin seeds sizzle, add chopped onions, ginger, turmeric, salt and cook for a minute.
  3. Add Okra pieces and sauté well. Cover the pan with a lid and cook for few minutes.
  4. After few minutes, add red chilli powder, pomegranate seed powder and mix well. Again cook for a minute.
  5. Add tomato pieces, coriander leaves and lime juice. Sauté and cook for 2-3 minutes.
  6. Switch off the flame and serve.

 

Okra is a power house of enormous and vitamins nutrients. It’s important to get several servings of vegetables in our diet each day. Okra health benefits include aspects such as being low in calories, being a great vegetable for people trying to lose weight, and being good for the digestive system. Okra is very low in calories. Okra contains no cholesterol or saturated fat, which are two components that should be avoided when losing weight. The fiber content in okra is high.

 

Along with containing high amounts of fiber, okra also contains high amounts of vitamins A, C, and B6. Large amounts of calcium, zinc, riboflavin, folic acid, and iron are also present in this vegetable. Anardana (pomegranate) powder is added to this dish as it gives a slight sweetness and sourness to the okra fry. Anardana powder is added to various curries, vegetable and lentil dishes to give an awesome tangy taste. This ingredients is extensively used in north Indian cuisine adding to dishes like Tadka dal, chole masala etc.

 

Addition of anardana powder into soups and stews is a brilliant idea as it enhances the flavours. Bhindi complements well with any type of seasonings. The dried pomegranate seeds are rich source of vitamin C, K and contain minerals like potassium and copper. You could add anardana powder to a variety of dishes like fruit salads, flavour hummus dip etc as they offer sweet/sour flavour.
