Prawn and Eggplant fried rice is an wholesome rice preparation where aromatic basmati rice is nicely tossed in a spicy mix of succulent pieces of prawn, eggplant and other spices cooked together.
- Heat ghee in a pan, add pepper corns, bay leaves, whole garam masala spices (cardamom, cloves, cinnamon stick), chopped onions, salt and cook it by stirring occasionally till onions turn to golden in color.
- Then add green chilies, chopped coriander leaves, grated coconut, ginger garlic paste, turmeric powder, mix it well.
- To it even add coriander powder, chopped eggplant, cook this also for few more minutes on a slow flame.
- After that add prawns, chili paste, garam masala powder, coconut milk, and cook it with closed lid for another 5 minutes.
- Later also add cooked rice, toss it and cook it with closed lid for a minute on a slow flame. Switch off the flame.
- At last, garnish with chopped coriander leaves, squeeze lemon juice and mix it.
