Kutchi dabeli is traditionally sold on the streets of Gujarati towns. It is another version of vada pav made with a sweet and spicy potato mixture.
- Heat the pan and add coriander seeds, cumin seeds, cloves, cardamom, dry red chilies, star anise, black cumin seeds, cinnamon, javitri and dry roast it then transfer it into a plate, allow it cool.
- Transfer it into a blender and make fine powder.
- Heat 1 tablespoon oil in a pan and add 1 tablespoon above fine powder, dessicated coconut, amchur powder, salt, sugar just mix it and switch off the flame.
- Heat 1 tablespoon oil in a pan and add roasted ground nuts later switch off the flame.
- To it add amchur powder, chaat masala, 1 teaspoon red chili powder, coriander powder and mix it nicely.
- Take the mixie jar and add coriander leaves, green chillies, bengal gram, lime juice, salt and blend it into smooth coriander chutney.
- Take garlic, salt, 1 tablespoon red chili powder and make a smooth paste with pestle, transfer into a bowl and add little water to make garlic chutney.
- Heat oil in a pan and add 2 tablespoon of prepared dabeli masala, boiled mashed potato switch off the flame.
- Mix nicely and spread it into a plate sprinkle chopped onions, pomegranate seeds, mixture of ground nuts, 1 tablespoon chopped coriander leaves and keep the stuffing aside.
- Slit ladi pav horizontally and spread garlic chutney, coriander chutney, dates and tamarind chutney, potato mixture and fold it.
- Spread butter on the ladi pav and roast it on hot tawa.
Now the kutchi dabeli is ready to serve.
