Kholapuri Mutton Biryani is a perfect blend of spices with mutton. Every bite is an explosion of flavors in the mouth with an amazing spicy taste.
- Grind fresh coconut pieces, chopped mint, coriander leaves to a fine paste.
- Make a fine paste of onion and ginger, keep aside.
- Semi cook the rice after soaking it for about 30 minutes.
- Heat oil in a pan, add whole garam masala spices (cardamom, cloves, cinnamon stick, mace, bay leaf, biryani flower, caraway seeds, star anise) and saute it.
- Then add mutton pieces and cook for about 5-10 minutes.
- Season it with prepared onion and ginger paste, turmeric powder, red chili powder, coriander powder, garam masala powder and let it cook by stirring occasionally.
- Add grinded paste along with 1 cup of water to the same pan and cook well.
- In another pan, add a layer of cooked rice then top it with prepared mutton, sprinkle one teaspoon of ghee, repeat the same process and cook it with closed lid on a slow flame for about 10 minutes.
Delicious Kholapuri Mutton biryani is now ready to serve.
