Bhatkali biryani is a special biryani savoured in all parts of coastal Karnataka.
- Take a biryani handi (with lid), add oil, when oil is hot, add whole garam masala spices (cloves, cinnamon stick, bay leaf, cardamom), onions, salt, turmeric powder, ginger garlic paste, green chillies, saute them for about 2 minutes.
- Add sliced tomatoes, chopped mint, chopped coriander leaves, chilli powder, garam masala, mix this nicely.
- To it, even add chicken pieces along with 1 cup of water, let it cook for some time on a slow flame.
- Take a big bowl add water, salt, 2tablespoon oil and bring to boil to cook rice, once the rice is 75% cooked, drain the water.
- Then add the rice in the top of the chicken and add ghee, saffron, lime juice.
- Take the lid and place the edges with dough on the lid and seal it.
- Place back the pan on the iron tawa and cook this on a slow flame for about 10 minutes then switch off the flame.
