Kakarakaya pulusu is bittergourd curry prepared with tamarind and spices. Karela ki Sabzi is a diabetic recipe that goes with rice, rotis.
- Peel bitter gourd slightly and cut into lengths of 1 ½ inch.
- Take a bowl and add bitter gourd pieces, little salt, turmeric powder and mix, keep aside.
- Heat oil in a pan and add mustard seeds, fenugreek seeds, onion and saute it.
- To it add ginger garlic paste, curry leaves, turmeric powder and saute it.
- Now squeeze water from bitter gourd.
- To the above mixture pan add bitter gourd, shallots, red chili powder, coriander powder, salt and mix it later cook with lid on it.
- Add desiccated coconut powder, tamarind juice and cook it for 5 minutes with lid on it.
- Atlast add little sugar, roasted sesame seeds powder and mix it, later cook for 1 minute.
Now kareka pulusu is ready to serve with rice or roti.
