- Heat oil and little bit of ghee in a pan add cashew nuts saute it till it gets brown color and transfers to bowl.
- In the same pan add mustard seeds, chana dal, urad dal, hing, finely chopped curry leaves, ginger, green chilli, saute it for a minute then add semolina And fry the semolina in a slow flame till it gets a nice color, stirring in between.
- Transfer to a bowl, once it cools down then add sugar, salt, curd and enough water, chopped coriander mix it well.
- Heat the idly cooker with water and grease the idly plates with ghee and place the cashew nuts in the plate.
- Pour the mixture to the idly moulds and steam it for 15-20 minutes.
