Cooked raw mango pieces simmered in a sweet and spicy coconut sauce. Kairas is a combination of two words, kairiras, meaning raw/green mango + juice. This is one of my favorite preparation using green mango.
- In a pan add black gram daal, sesame seeds dry roast them, add coconut powder cook this until golden in colour.
- Switch off the flame and make a coarse powder.
- Heat oil in a pan add red chilly, mustard, fenugreek seeds, add curry leaves, a pinch of hing, raw mango (cut into small pieces) saute this.
- Add salt, jaggery and add water put the lid on cook for some time, then add tamarind juice, cook it and switch off the flame.
