Grilling eggplant and baby corn is a fantastic way to add a smoky note to its sweet flavor. A tempting blend of spices is used to marinate this recipe.
- Take a bowl add vinegar, soya sauce, chilli flakes, chopped spring onions, sugar, salt, oil and mix it well.
- Then add baby corns, aubergine (eggplant) and mix it nicely. 3. Leave it for 15min for marinated.
- After 15 minutes skewer it one by one of baby corn and eggplant.
- Then place it on hot grill pan and add oil to it.
- Keep a lid on top of it and cook it on low flame.
- For barbecue sauce: Take a bowl add tomato ketchup, chopped tomatoes, chilli sauce, chilli pepper, vinegar, sugar, chopped ginger, chopped garlic, chopped coriander and mix it nicely.
- Remove baby corns from pan and transfer into a plate.
- After few minutes remove eggplant and transfer into a plate.
- In the same pan add oil, chopped garlic, chopped onions, chopped green chillies, capsicum juliennes, noodles, green chilli sauce, chopped coriander leaves, soya sauce and saute it.
- Simmer it and cover it with a lid.
- Then keep cooked baby corn and eggplant on a pan.
- After 2 minutes transfer into a serving plate.
- Garnish with spring onion.
Now grilled baby corn eggplant is ready.
