This is a south Indian recipe especially prepared in Andhra Pradesh. Here curry leaves mixture is used for stuffing into brinjal that add additional taste and flavour to the recipe.
- Heat little oil and add curry leaves and dry roast until it become dry, flaky and keep aside.
- Heat pan and add dry red chillies, coriander seed, chana dal, peppercorns, sesame seeds and dry roast it later transfer into mixie jar, also add curry leaves, salt to make powder.
- Transfer into a plate, and add tamarind juice and mix stuffing mixture nicely.
- Slit small eggplant and stuff mixture and keep aside.
- Heat 1 tablespoon oil in a pan, add ginger, mustard seed, stuffed eggplant and cook it on slow flame for 7 minutes with lid on it.
- Remove lid and add left over tamarind juice, masala, place lid cook it for 3 minutes on slow flame.
Now curry leaf stuffed brinjal is ready to serve.
