This is a rustic Indian kebab made with Desi Kala chana (Bengal gram ) which is stuffed with paneer and can be shallow fried or air fried.
For making kebabs:
- Take some desi chana, soak it in water and boil it by adding salt till they are nice & soft.
- In a blender add soaked desi chana, garlic, ginger, chopped green chilies, mint, coriander, chana masala, chat masala, make it into a powder, if required add some water for moisture.
- Mix all the ingredients to make it look like a dough, then transfer this into a bowl.
- In this add roasted chana dal powder and mix it again.
For the stuffing:
- In a bowl, add paneer, mozzarella cheese, chili flakes, mix it well and make into small dumplings.
- Make the chana dal mixture into dumplings, take the chana dal dumpling flatten it and stuff the paneer dumpling in it, seal the edges and flat it. you can make shallow fry or pan fry.
- For shallow heat 1 teaspoon of oil in a tawa, place the kebabs on it and fry on both sides.
- For pan fry: take kababs and coat with all purpose flour then dip it in the egg mixture and again coat with bread crumbs. Heat the oil in a pan and place the coated kababs and fry them.
Serve with tomato sauce or mayonnaise based sauce.
