The cucumber dal is a type of dal cooked with yellow lentils and Indian cucumber. Andhra region also call it as Budamkaya.
- Soak moong dal for about 15-20 minutes and keep aside.
- Heat oil in a pan, add mustard seeds. When they splutter, add onions, curry leaves, green chilies, salt and saute it.
- To it add ginger garlic paste, tomato, turmeric powder, small yellow cucumber pieces along with seeds, red chili powder and saute it.
- Add soaked moong dal, water and mix nicely, later cook it until it become soft with lid on it.
Now budamkaya lemon cucumber dal is ready to serve with roti, pulka and rice.
