Biryani is traditionally associated with the Mughlai cuisine. Aloo biryani is a flavourful and easy vegetarian biryani recipe prepared with diced potatoes.
- Remove peel of potato and cut into small cubes and par boil it until it is 80% cooked.
- Heat ghee with 2 tablespoon oil and add bay leaves, cardamoms, phool, black cumin seeds, cinnamon, cloves and saute it.
- To it add green chillies, ginger garlic paste, mint leaves, garam masala, coriander powder, yogurt, green chili paste, little salt and saute it, later cook it until yogurt becomes thick mixture.
- Add water and check for seasoning.
- To it add basmati rice and mix it, place lid cook it.
- Take a bowl and add corn flour, all purpose flour, ginger, garlic, red chili powder, curry leaves, salt, slit green chilies,water and mix nicely.
- To it add potato and mix nicely until mixture coats to potato pieces.
- Heat oil and deep fry the potato pieces and transfer into paper towel.
- In the same oil fry curry leaves and transfer into same paper towel.
- Once the rice is cooked top it with fried potato 65 pieces, curry leaves, lime juice.
Now aloo biryani is ready to serve with raitha.
