Ridge gourd chutney is a healthy, tasty side dish for idli and dosa.
- Fry the tamarind, green chilies, garlic, cashew nuts, chana dal and transfer to a plate.
- In the same pan add oil mustard seeds, cumin seeds, chopped onion, chopped ridge gourd and cook it for 2 minutes.
- Then add water cover the lid and cook it for 3 minutes.
- In a blender add ridge gourd mixture and fried ingredients and make it a fine paste and transfer into a bowl and add salt and mix it once.
