Siddu is a Himachali dish with one of the most loved dishes in Himachal mostly in Mandi, Kullu, Manali, Rohru, and Shimla. This recipe is made with a simple stuffing of veg and cooked as a crispy outer layer of dough similar to a kachori.
- Take a bowl add whole wheat flour, salt, carom seeds, ginger garlic paste, dry yeast, little water, oil and mix it like a dough and rest it.
- In a hot pan add oil, sweet corn, green chili paste, coriander powder, turmeric powder, cumin powder, red chili powder, boiled potatoes, salt and saute it.
- Then add garam masala, lime juice, coriander leaves and saute it, later transfer in to a plate.
- Take the steamer add water, then keep a colander then a plate on top of it and leave it for steaming.
- Now divide the dough into small portions and roll it like a roti and add the stuffing mixture in this.
- Now the siddu dish is ready to steam
- Then place siddu into the steamer and leave it for 15-20minutes.
- When it is cooked take out the siddu.
- Transfer into a plate and apply ghee to it.
For chutney:
- Take a mixie jar add spring onions, green onions, green chilies, garlic, coriander leaves, lime juice, onions, ice cubes and crush it.
Now the chutney is ready to serve with siddu.
