Ingredients used in SHRIKHAND Indian yogurt sweet
• Hung curd/ yoghurt - 500 grams.
• Cardamom powder - 1/2 tea spoon.
• Saffron colour - few drops.
• Sugar - 500 grams.
• Sliced pistachios - as required.
• Sliced almonds - as required.
Method:
  • Set milk to make yogurt but do not rest it out for a long time as the yogurt should be sweet to make this sweet.
  • Take a muslin cloth and pour in the yogurt and hang the yogurt for 2 to 3 hours to completely drain all the way from it.
    When the whey is completely drained off, take the thick yogurt into a bowl.
  • If you get about 500 gms of yogurt and add 500 gms of sugar and mix well. Let this sit for about 2 to 3 hours in the refrigerator. Add some saffron color and mix well. Strain this mixture through a strainer, this helps in removing off the milk solids if any.
  • Add cardamom powder and mix well.

Curd or yogurt is a very common food item that is available in most houses and that we eat in our day to day life. But hardly would anybody actually think of making a delectable, mouth-watering cake with yogurt or curd. There are various ways of using the Curd or Dahi in making some very delectable and creative recipes that most of us don’t know.

 

Yogurt (Curd) cake is a very light, flavorful and appetizing dessert that is easy to prepare and simply a perfect snack to be eaten with a piping hot cup of coffee or tea. The cake is a pleasing dessert with magical twist of flavors, spongy texture and lip smacking taste. The curd cake is quite easy to make and this version of cake uses curd, whisked or beaten well added to other ingredients wonderfully giving a buttery, tangy and sweet addictive essence.

 

Start off the cake by separately the egg yolks and egg whites. In a mixing bowl, add in the egg yolks, sugar and with help of the hand blender mix well. Add in little by little ghee, vanilla essence, cardamom powder, ginger powder, yogurt, dry fruits like cherries, tutty fruity and mix well. Take another bowl, add all-purpose flour, baking powder, mix well and keep aside.  Take a bowl add in the egg whites and whisk well, add a pinch of salt and whisk again until you get a nice froth.

 

Take the yogurt mixture and in the all purpose flour and soda mixture and mix well, then add half of the egg whites and fold carefully, add in the remaining portion of egg white and mix well. Pour this mixture into the greased mould and bake at 180 deg C for 45 to 50 minutes. When done, cut the cake into pieces and serve as snack during tea time. You will experience the zest of vanilla, ginger powder and cardamom powder flavors amalgamated well into this spongy curd cake when you take a bite in.

 

The smooth custardy texture and taste of this yogurt cake is just divine. The sponginess of the cake is amazing and the fantastic flavors of cherries and tutty fruity enhances the zing of the cake. Yogurt and vanilla go with all kinds of flavors; however this is a brilliant base recipe to dress up with whipped cream or drizzle of maple syrup.

  • Curd is healthy for the heart as it minimizes the risk of high blood pressure and helps reduce cholesterol levels by preventing the thickening of carotid arteries.
  • It helps in boosting the immune system as curd has good bacteria that help in fighting against several microorganisms present in the body.
  • Being a dairy product, curd too has high amounts of calcium and phosphorous, hence good for your teeth and bones.
  • And many more. With all these health benefits, curd thus is a super food item that we must consume on a daily basis.

 

Curd is also considered one of the best aids to natural good looks. It supplies the nerves and the skin with healthy ingredients and counteracts the ill-effects of exposure to the scorching sun. The bacteria in curd make the skin soft and glowing. Curd is also considered valuable in conditioning the hair. Apart from the lactic acid organisms placed in the milk for the purpose of souring it, the acid of sour milk and its lactose content are important curative factors in a number of diseases. Curd brings relief to patients suffering from gastro-intestinal disorders such as chronic constipation and diarrhoea.
