Spiny gourd is a seasonal vegetable popular in the state of Rajasthan especially during the rainy season Spiny Gourd Onion Tomato Fryis slightly similar to a smaller version of bitter gourd. This dish is brilliantly made with spiny gourds cut into quarters, slowly roasted in spices to bring out the flavor of the vegetable giving a nice delicious taste while eating. Spiny gourds are small pods, dark green in color and have a meaty texture. It also has a unique flavor and tastes extremely good eaten with rice, rasam or pappu pulusu.
Spiny gourd is a seasonal vegetable popular in the state of Rajasthan especially during the rainy season. This vegetable is also commonly known by various names such as Kantola, Bhat korola, Kakrol, Kantoli etc. It is mainly cultivated in the mountain regions of India. The fresh spiny gourds are generally green in color and slowly change color when they get ripe from light green to yellow indicating they are over-ripen and taste bitter, hence they are often are cooked when fresh and green in color.
