Ingredients used in Spiny Gourd Onion Tomato Fry
• Turmeric powder - 1/4 tea spoon.
• Salt - to taste.
• Onions(slices) - 2 numbers.
• Garlic(crushed) - 5 cloves.
• Cumin seeds - 1/4 tea spoon.
• Mustard seeds - 1/4 tea spoon.
• Oil - 1 tablespoon.
• Spiny gourd (aa kakarakaya) - 200 grams.
• Tomatoes(chopped) - 2 numbers.
• Chili powder - 1 tea spoon.
• Cumin powder - ½ tea spoon.
• Coriander powder - 1 tea spoon.
• Coriander leaves(chopped) - ½ bunch.
Method:
  • First, take spiny gourd (Aa kakarakaya) fry in the hot oil, keep it aside.
  • Pour some oil in the pan, when oil is hot add mustard seeds, when mustard seeds splutter add cumin seeds, crush garlic, slices of onions, salt, saute it for a minute then add turmeric powder, chopped tomato, chilly powder, cumin powder, coriander powder, mix it well cook for 2 minutes.
  • Then add spiny Gourd put the lid on and let it cook for some time, then add chopped coriander.

Serve this with chapati.

   Spiny Gourd Onion Tomato Fry

 

 

Spiny gourd is a seasonal vegetable popular in the state of Rajasthan especially during the rainy season    Spiny Gourd Onion Tomato Fryis slightly similar to a smaller version of bitter gourd. This dish is brilliantly made with spiny gourds cut into quarters, slowly roasted in spices to bring out the flavor of the vegetable giving a nice delicious taste while eating. Spiny gourds are small pods, dark green in color and have a meaty texture. It also has a unique flavor and tastes extremely good eaten with rice, rasam or pappu pulusu.

 

Spiny gourd is a seasonal vegetable popular in the state of Rajasthan especially during the rainy season. This vegetable is also commonly known by various names such as Kantola, Bhat korola, Kakrol, Kantoli etc. It is mainly cultivated in the mountain regions of India. The fresh spiny gourds are generally green in color and slowly change color when they get ripe from light green to yellow indicating they are over-ripen and taste bitter, hence they are often are cooked when fresh and green in color.

Recipe:  Spiny Gourd Onion Tomato Fry

Ingredients;

  1. Salt                            -       to taste
  2. Onions                      -       2 nos
  3. Garlic, crushed       -       5 cloves
  4. Cumin                      -       ½ tsp
  5. Mustard                   -       ¼ tsp
  6. Oil                             -       1 tbsp
  7. Spiny gourd            -       200 gms
  8. Tomatoes                -       2 nos
  9. Chilli pd                  -       1 tsp
  10. Cumin pd               -       ½ tsp
  11. Coriander pd         -       1 tsp
  12. Coriander leaves   -       1 bunch

Directions:

  1. Firstly cut the spiny gourd (Aa Kakarakaya) and fry in hot oil and keep aside.
  2. Add little oil in the pan and when it gets hot, add mustard seeds. When they crackle, add cumin seeds, crushed garlic, slices of onions, salt and sauté for a minute.
  3. Add turmeric pd, chopped tomatoes, chilli pd, cumin pd, coriander pd and mix well for 2 minutes.
  4. And then add spiny gourd and cover the pan with a lid and allow cooking for some time.
  5. Finally garnish with coriander leaves and switch off the flame.
  6. Serve with roti, chapatti or rice.

 

 Spiny gourd onion tomato fry is an awesome and simple dish yet absolutely delicious and yummy to taste. Made with simple and regular spices, onions and tomato on cooking give a pleasant sweet and tangy taste taking off the slight bitterness from the spiny gourd vegetable. To get the exact taste, you must try preparing this dish and I am sure will make it a part of your daily diet. Spiny gourds are mild and easy to digest. They are very good for diabetic people.
