Ingredients used in Methi Chaman Chicken
• Fenugreek - 1 bunch.
• Spinach - 2 bunch.
• Water - as required.
• Oil - 2 tablespoons.
• Onion(chopped) - 1/2 cup.
• Salt - to taste.
• Turmeric powder - 1/4 teaspoons.
• Green chillies (chopped) - 2 numbers.
• Garlic - (5-6) clove.
• Chicken - 700 grams.
• Coriander powder - 1/2 teaspoons.
• Cumin powder - 1/2 teaspoons.
• Garam masala powder - 1/4 teaspoons.
• Pepper powder(crushed) - 1 teaspoons.
• Nutmeg powder - 1 pinch.
• Tomato puree - 1/2 cup.
• Fresh cream - (1-2) tablespoons.
• Lime juice - (1-2) teaspoons.
Method:
  • Transfer to a blender and make a smooth green paste.
  • To it, even add coriander powder, cumin powder, garam masala powder, crush pepper powder, nutmeg powder tomato puree and mix nicely, later place lid and cook it for 3-4 minutes with the lid on it.
  • Check for seasoning, add salt and cook for another 4-5 minutes.
  • Now transfer to a serving bowl and serve it with rice.

It is extremely flavorful, amazing green color, creamy and silky in texture. The taste of this methi chaman chicken is absolutely divine and tantalizing. This dish is easy and fast to cook, mildly spiced, chicken cooked and engulfed in a creamy fenugreek and spinach leaves gravy seasoned with various spices making it delectable to taste. 

The appearance of the dish can just make most of the hungry ones to pounce over the food. Methi in Hindi is the commonly known as the fenugreek leaves. It is a wonder herb either the greens or the seeds are very popular spice and herb in the Indian cooking. The combination of leafy green vegetables like spinach and fenugreek leaves have a delicate texture and jade green color which provides more nutrients than any other food. 

This is an amazing combination cooked with chicken and spices are just tempting. This can be eaten best with roti, naan, phulkas or rice. They go well with pulaos too. Cooked in a traditional Indian style,  Methi Chaman Chicken is very easy to cook where fenugreek and spinach leaves are blanched and pureed. Oil is tempered with cumin seeds, chopped onion, green chillies, and garlic which are nicely fried. Puree is then cooked along with few spices. 

Then Chicken and and allowed to cook in the green gravy.   Finally cream is added to the gravy to give richness to the dish sprinkled with little lime juice that gives tang and zest to the dish. Fenugreek leaves adds flavor and savor to your cooking and you can add fenugreek leaves to any kind of cooking that involves dal, vegetable, rice, or roti (chapathi flour). Greens like Fenugreek, spinach etc are very popular leafy vegetable that are added into various dals and curries and cooked in the major sub-continental region of India and Pakistan, usually together with potatoes and stuffed in Indian flat breads such as Parathas or Naan (flatbread). It is usually eaten boiled in China, and central and Western Asia. Major fenugreek producing countries are India, Pakistan, Bangladesh, Argentina, Egypt, France and China. 

India is the largest producer of the fenugreek in the world and northern states of India like the Rajasthan, Gujarat, Uttaranchal, Uttar Pradesh, Madhya Pradesh, Maharashtra and Punjab are the major producing states of fenugreek. Spinach is another wonderful green that originated in ancient Persia (modern Iran). Arab traders carried spinach into India and later introduced into ancient China where it was known as Persian vegetable”.

 The earliest available record of the spinach plant was recorded in Chinese, stating that it was introduced into China via Nepal (probably in 647 AD). Truly a fantastic dish mildly spiced creamy rich in taste nutritious and healthy. A balanced diet for the kids! Recipe of Methi Chaman Chicken:

Ingredients:

Fenugreek leaves, Chopped                     -        2 cups

Spinach, chopped                                      -        1 cup

Chicken                                                        -        300 gms

Oil                                                                  -        1 tbsp

Onions, chopped                                       -        1-2 nos

Salt                                                                -        to taste

Garlic, chopped                                          -        5-6 nos

Turmeric powder                                        -        ¼ tsp

Green chillies, chopped                             -        5-6 nos

Coriander powder                                      -        1 tsp

Cumin powder                                            -        ½ tsp

Garam masala powder                                     -        ½ tsp

Freshly crushed pepper powder                 -        ½ tsp

Nutmeg powder                                          -        pinch

Tomato puree                                              -        2-3 tbsp

Cream                                                            -        2-3 tbsp

Lemon juice                                                 -        ½ no 

Directions:

  • Add some water in a kadai or pan and add the chopped fenugreek and spinach leaves. Steam cook for a minute. Remove and strain the water. Puree the leaves and keep aside.
  • Add little oil in a kadai and add chopped onions and salt. Fry until the onions get slightly golden in colour.
  • Add turmeric powder, chopped green chillies, chopped garlic and Chicken pieces. Mix and roast well.
  • Add coriander powder, cumin powder, garam masala powder, pepper powder, nutmeg powder and mix.
  • Add tomato puree, cover the kadai with a lid and cook for about 5 minutes until oil is released on the sides.
  • Add the green leafy puree and mix well. Check for seasoning.
  • Cook for another 5 minutes.
  • Add cream and little lemon juice. Mix well and serve.

Chicken is considered to be one of the best ono-vegetarian sources of protein. It is lean meat which means it contains more amounts of protein and less amount of fat.
