Curd or yogurt is a very common food item that is available in most houses and that we eat in our day to day life. But hardly would anybody actually think of making a delectable, mouth-watering cake with yogurt or curd. There are various ways of using the Curd or Dahi in making some very delectable and creative recipes that most of us don’t know.
Yogurt (Curd) cake is a very light, flavorful and appetizing dessert that is easy to prepare and simply a perfect snack to be eaten with a piping hot cup of coffee or tea. The cake is a pleasing dessert with magical twist of flavors, spongy texture and lip smacking taste. The curd cake is quite easy to make and this version of cake uses curd, whisked or beaten well added to other ingredients wonderfully giving a buttery, tangy and sweet addictive essence.
Start off the cake by separately the egg yolks and egg whites. In a mixing bowl, add in the egg yolks, sugar and with help of the hand blender mix well. Add in little by little ghee, vanilla essence, cardamom powder, ginger powder, yogurt, dry fruits like cherries, tutty fruity and mix well. Take another bowl, add all-purpose flour, baking powder, mix well and keep aside. Take a bowl add in the egg whites and whisk well, add a pinch of salt and whisk again until you get a nice froth.
Take the yogurt mixture and in the all purpose flour and soda mixture and mix well, then add half of the egg whites and fold carefully, add in the remaining portion of egg white and mix well. Pour this mixture into the greased mould and bake at 180 deg C for 45 to 50 minutes. When done, cut the cake into pieces and serve as snack during tea time. You will experience the zest of vanilla, ginger powder and cardamom powder flavors amalgamated well into this spongy curd cake when you take a bite in.
The smooth custardy texture and taste of this yogurt cake is just divine. The sponginess of the cake is amazing and the fantastic flavors of cherries and tutty fruity enhances the zing of the cake. Yogurt and vanilla go with all kinds of flavors; however this is a brilliant base recipe to dress up with whipped cream or drizzle of maple syrup.

Excellent as always, but you skipped HOW to make the yogurt !!! Considering how often you mentioned it needs to not be sour, that seems like an important thing to know!

i like all kinds except honey flavored. as for plain, i defeat the purpose of it being called plain yogurt and add sugar to it.

500 gr of sugar for 500 gr yoghurt is ridiculous. People will simply catch diabetes after having this one!!!
