Noodles are staple food in Chinese cuisine and have a great variety of Chinese noodles which vary according to their region of ingredients, shape or width and the way it is prepared. They are an important part of most regional cuisines in and around China as well as Taiwan, Singapore and other Southeast Asian nations. Noodles are consumed in various forms across the world. They are simple yet very delicious to eat and has very yummy effect because of the heat, spice and the strong aromas that are blend in perfectly with the mild noodles.
Noodles History states that Chinese noodles is the ancestor of all noodles and is world renowned. The major ingredient that goes in making of noodles is wheat flour. In the northern part of China, noodle has become the staple food for people although rice is still the vital food in the southern part. The noodles are vastly different in both the northern and southern parts of China. In South, it’s the egg noodles with plain flour being the major ingredient while in the north, the noodles are made of wheat flour usually without the use of eggs.
Traditionally, in China, noodles are delicately hand-made with a unique technique from flour mixing, beating, pulling and cutting of noodles where every step is done manually. There are a variety of noodles which include wheat, egg, rice vermicelli, buckwheat, rice stick noodles, each having a slight difference in taste and texture. Noodles often made with unleavened dough which is rolled flat and cut into a variety of shapes. While long, thin strips are the most common variety of noodles, they are also cut into different shapes such as waves, helices, tubes, strings or shells.
These noodles are usually cooked in boiling water sometimes with oil and little salt added. They can also be stored for short time in refrigerator or dried and stored for future use. Noodles are often pan fried or deep fried accompanying with a sauce or in a soup. Homemade noodles is naturally the best than the store-bought as they are fresh, richer, tastes better and can be served with mixing a variety of meats, vegetables and sauces combined and stir fried to give a punch to the dish.
Noodle variations There are a lot of variations that you can give in making the noodles. Noodles are eaten hot or cold, steamed, stir-fried, deep fried, boiled or served in a soup. They are excellent source of protein and extremely high in complex carbohydrates. Often we are confused with the difference between a ‘lo mein’ and ‘chow mein noodles’. There are two variations in preparing these recipes.
In case of low mein, it involves tossing of boiled noodles in the wok and then mixing them with other ingredients during the final stage of cooking which helps the noodles to absorb more flavours from the sauce while cooking of Chow mein, the ingredients are stir-fried and then served over the noodles that have been prepared separately. Ultimately however it is cooked; we love eating noodles and are one of the most liked dishes by most of us, especially the kids.
