Chicken biryani is the favourite dish of chicken lovers. It has a main place in non-veg restuarants, mainly in tamil nadu.I post this recipe which you can do in your home, when ever you wish to eat biryani. No need of searching restuarants. My biryani rec
- Wash and clean the chicken. cut and fry one onion till brown and grind to smooth paste.
- Marinade the chicken with onion paste, 1tbsp of ginger garlic paste, red chilli powder, coriander powder, garam masala powder, curd, little water, salt for at least 2 hrs.
- Soak the rice for 20 minutes, wash 2-3 times, drain and keep aside.
- Heat little oil in a pan. shallow fry the marinated chicken till light golden brown for 2 minutes, keep aside. (reserve the marinade masala).
- Heat ghee in a pan, add whole garam masala (cardamom, cloves, mace, bay leaf, star anise, cinnamon stick), fry till splutters.(you can use the oil used to fry the chicken too) Add fennel seeds, after it splutters add green chillies, fry well.
- Now add chopped onion fry till golden. add ginger-garlic paste and fry well.
- Now add the chicken, mix well cook covered for 10 minutes. After 10 minutes add chopped tomatoes, mix well.
- Now add the reserved masala, mix well. cook covered till chicken is 3/4th done.(don't add water, chicken has to cook in its own juice)
- Now add rice, coriander and mint leaves, water. adjust salt. cook covered in medium flame till rice and chicken are done.
- Fry cashew and raisins in ghee and add to rice. serve hot with raita.
