This simple side dish, Potato Capsicum fry makes a stimulating treat from the regular capsicum specials like the stuffed capsicum, capsicum masala rice.Brinjal or baingan makes for an excellent combination with capsicum.
- Take a pan and add peanuts, channa dal, coriander seeds, dry red chillies, peppercorns, urad dal, tamarind and mix it. Saute all these nicely for 5 minutes.
- Then take an electric blender and add those ingredients, make a fine powder and keep aside.
- Take a pan heat oil then add mustard seeds, cumin seeds, curry leaves, chopped potato, turmeric powder, saute all these nicely for few minutes.
- Then add chopped brinjal and let it fry for few minutes.
- Now add chopped green chillies, chopped onion, chopped red and green capsicum.
- Add the mixture powder we already prepared at the start, toss it well then add boiled rice and toss again.
Serve fried rice with curd.
