Khatta dhokla is a steamed, soft and fluffy cakes made from rava, sooji or semolina.
- In a bowl add idli rava, urad dal to soak it overnight.
- Then strain the water and blend into a smooth paste in the blender.
- Then add yogurt, cooking soda(optional) and mix it thoroughly to keep it aside for 6 hours for fermentation.
- Now add green chili paste, asafoetida, salt, oil and mix it thoroughly.
- Then add citric acid, little water, cooking soda and mix it well.
- Then take a plate as shown in the video and apply ghee then add 2 ladles of batter and spread as a thin layer then sprinkle pepper crush, now steam it until dhokla is done.
- Now apply oil on dhokla and cut it into the diamond shape.
