- Cut a 4 inch hole around the stem of the pumpkin. Remove the strings and seeds. Set aside.
- Sautee the onions in the oil. Add all other ingredients (except the pumpkin). Bring to boil and then simmer for 15 minutes.
- Spoon or pour the stew into the pumpkin as it sits on a shallow baking dish. Put the lid on the pumpkin. Coat the outside of the pumpkin with oil. Bake at 350 degrees for one hour.
