Description
Greek pasta salad is one of our weekday lunch in our lunch box. I had it for the first time in a Mediterranean restaurant and liked it, so after that i started making it. Its a healthy and nutritious light lunch or can be used as a side salad along with some sandwich. It goes well as a side with garlic bread too.1. Boil and drain and make ready any kind and shape of pasta you like.
2. Cut different salad items per your choice. I use onion, green and red peppers, tomatoes, cucumbers and olives. Chop into small cubes. You can even add some cubes of boiled potatoes or whole small red potatoes.
3. Mix in bowl, the drained pasta and chopped vegetables. The quantity of pasta should be approximately one third to half of the vegetable portion.
4. Add chopped cilantro, olive oil, salt and small feta cheese cubes. Sprinkle some dried Italian herbs if available or else its fine if its not available, you can add some very little crushed pepper instead. Anyways the feta cheese flavor is dominant in this dish. I normally add a dried coarse crushed mixture of parsley, oregano, basil and thyme. Mix well.
Ready to eat as a light and healthy lunch.

- → Peppers Capsicum 0.5 Cup.
- → Tomatoes 0.5 Cup.
- → Black Olives 0.25 Cup.
- → Cucumber 0.5 Cup.

- → Olive Oil 1 Tablespoons.
- → Italian herbs 1 Teaspoons.
