A very rich and nice dal preparation Sultani dal, Mughlai influenced simple tadka dal with extra flavors of smoky pan leaf and charcoal.Specially served for Kings.
- First, boil the tour dal and keep it aside. Heat butter and ghee in a pan add cloves, cardamom, cumin seeds when cumin seeds splutter and add chopped garlic, saute it then add chopped onions, salt, turmeric, green chili saute it for few minutes.
- Then add boiled tour dal, once the dal is cooked add milk, beaten yogurt put the lid on and let it comes to boil.
- Adjust the seasoning and add sugar, saffron water, cream, chopped spring onions.
- In a steel bowl put the betel leaf and put this bowl on top of dal, and a small piece of charcoal on it, sprinkle garam masala powder while smoking pour 1 teaspoon of ghee on it and immediately cover it and switch off the flame and keep for ten minutes.
- Remove the steel bowl and mix the dal once.
Serve it with rice.
