Cake like dessert made with cookies (Marie)...
- Soak finely chopped cherries and strawberries in rum or brandy for a couple of hours (completely optional).After soaking a couple of hours, drink the rum and leave the soaked fruits for the dessert.
- Whisk the cream along with the sugar into a creamy consistency as shown in pineapple pastry.
- Transfer 1/4th of it into a clean bowl. Add cocoa to the remaining part of the cream and whisk it again. I am complicating things in here, you could also add the cocoa to the entire cream, but I like it this way.
- You need to add cocoa as you wish... but too much of it would make the cream bitter. I would like to refer to it as white cream and the brown cream (cocoa) from here.
- Add the milk and coffee powder together and mix it well. Make sure the milk is a little hot. This makes the cookies a little soft when you soak them in the coffee. Make sure the coffee is in a wide mouthed bowl... just to make the soaking process easy.
- Soak the cookie one by one in the coffee not more than 3-4 seconds. You dont want the cookies to become very soft. I recommend and use Marie biscuits.. keep the cookies aside on a neat plate.
- Apply a thin layer of white cream over one of the cookies. Put some of the chopped cherries and strawberries on top of the cream. Repeat the process and create a stack of 3-4 such cookies.
- Avoid putting cream and cherries on the top one. You would end up doing 3-4 such stacks. Keep them aside.
- If there is any white cream remaining, mix it along with the brown cream. Dont whisk it too much, you might want to see white texture in your brown cream.
- Now apply the brown cream all over and around the stack. I like putting the cream around with my hand which makes the cake look beautiful... looks like patch work. Be liberal in applying the cream. Now on top of this cake garnish with chopped cherries and strawberries. Refrigerate and serve cold.
