Andey Ka Kut is an amazingly delicious side-dish made with boiled, fried eggs cooked in a spicy smooth silky tomato gravy. This is a very popular Hyderabadi dish made for special occasions and feast. This silky gravy traditional egg dish goes well eaten with Qubooli rice and various other Hyderabadi dishes. This is a royal preparation that can also be served with Khichdi, naan or any type of Indian flat breads. Egg is one of the most versatile ingredients that is used for making a variety of savory and sweet dishes. Egg is used right from making a simple boiled egg to preparing a yummy, mouth watering cake.


Eggs are truly an amazing ingredient that can be added in making an appetizing breakfast, snacks or a scrumptious lunch or dinner. When it comes to breakfast recipes, eggs are extensively used for making yummy delicious fluffy Omelets, or you could also easily poach, scramble or hard boil the eggs and use them in making various variations of egg dishes. Ingredients:


Eggs                                 -       5 nos


Oil                                    -       2 tbsp


Turmeric powder              -       pinch


Coriander powder            -       1 tbsp


Chilly powder                   -       1 ½ tsp


Ginger garlic paste           -       1 tsp


Fried Onions                    -       ½ cup


Mint, chopped                 -       ½ bunch


Coriander, chopped         -       ½ bunch


Red Chillies, dry              -       2 nos


Mustard seeds                 -       ¼ tsp


Cumin seeds                    -       ¼ tsp


Onion seeds (kalonji)    -       ½ tsp


Curry leaves                     -       3 sprigs


Chick pea flour                -       1 tbsp


Tomato puree                   -       1 cup


Green chillies                   -       3 nos


Salt                                     -       to taste


Sugar                                 -       ½ tsp


Method:



  1. Take a bowl, add turmeric powder, coriander powder, chilli powder, ginger garlic paste, mint, fried onions, coriander leaves and little water. Mix well to make slurry.

  2. Heat oil in a pan and when the oil gets hot, add red chillies, mustard seeds, cumin seeds, kalonji, curry leaves, chick pea flour and mix well.

  3. Add in the slurry, tomato puree, green chillies, little water, mix well and cook for 10 minutes.

  4. Check and adjust the seasoning. Add some salt, sugar, boiled and fried eggs and cook again for some time.

  5. When it comes to a boil, switch off the flame.

  6. Serve with rice, naan or chapatti etc.
