Description

Eggplant chutney is a spicy and tangy chutney, eggplant/ brinjal blended with ginger, garlic, tomatoes, green chilies and tamarind.

  1. fry eggplant and keep a side heat oil add nustard,cumin,ginger garlic,cashewand fried channadal ( nuts are optional)add gr chilli curryleaves,hing and tamrind and tomatoes cook till soft and well done.
  2. add fried brinjal and saute and put in a blender and add tempering serve hot.
