- Take a bowl add flour, salt, sugar, lemon juice, saffron, milk then make it a dough and rest it.
- Take raw papaya cut into thin slices then cut into pieces.
- In a pan add water, papaya pieces, pinch salt and sugar.
- Boil it for 20-25 minutes which becomes like chutney called as plastic chutney.
- Take the dough make it like a big chapati and apply butter to it.
- Firstly fold it then start rolling it and cut into pieces.
- Then layer it one on top of it.
- 3-4 layers of it which forms like one particular dough.
- Repeat the same process for rest also.
- In boiling mixture i.e. plastic chutney add lemon juice, raisins and leave it.
- Now take the dough and start rolling it to 4-5 inches.
- In a pan add nigella seeds and roast it.
- Once the chutney is ready transfer these roasted into the plastic chutney and cook it.
- Take a pan add oil and shallow fry the roti.
- Repeat the same process for other roti's also.
- Place the roti in serving plate and add plastic chutney on top of it.
