This is a very common rice item which my mom and pinni make for special occasions, especially at birthdays. In fact all the women in my family know how to make this delicious recipe. It is easy to make and makes for a perfect celebratory food.
I'm a doctor by profession and have never had the time to learn how to cook inspite of repeated pestering from family members.
I was posted at Goa Manipal Hospitals for 3 months, during which I was compelled to learn cooking as it was very difficult to eat out everyday. I started watching Vahchef - and have become a regular viewer and an ardent fan. I've started cooking since 5 months and now I cant stop. I absolutely enjoy cooking - Thanks to Vahchef.
My recipe will help even learners make a deliciuos pulao. This is my pinni's recipe and I would love to share it with everyone especially amateurs like me.Heat 4 tbsp of oil in a wide kadai on medium flame
Add 2 tsp of shahjeera - let it splutter , but not more than 1 min
Add 4 cloves, 2 green cardamom, 2 bayleaves and 2 cinnamon bark
Cook for a min
Add the finely chopped onions and 10-12 longitudinally cut fresh green chillies
Saute till the onions are slightly brown
Add 1 handful of finely chopped Pudina leaves
Stir for 2 min on medium flame till the pudina leaves shrink / partially cooked
Add all the vegetables and curry leaves.
Add 2 tsps of ginger garlic paste.
Stir cook for 3-5min.
Now add 9 glasses of water to the kadai and boil all the contents for 10 min
( Advantage - All the flavours become nice mixed and the vegetable also cook well. )
Add the 4 glasses of rice to the water
Add 4 tsps of salt
Stir all the contents well.
Put the lid on.
Wait till the rice is completely cooked and there is no more water remaining.
The Veg Fried Rice / Pulao is ready
You will usually not find onions in the final dish as they completely disappear.
