Sweet coconut rice is a Maharashtrian festival recipe prepared on Narali Purnima day or full moon day. It can be prepared in a rice cooker or done on the stove.
- Take a pan and add rice, coconut milk, grated coconut, kewra water and cook until rice is 90% done on slow flame.
- To it, add sugar and cook it for about 3-4 minutes.
- Take another small pan and add cashew nuts, raisins and saute it, later add to above rice and cook it for 2 minutes.
