Stuffed bajji is one such street food snack regularly prepared at evenings to delight all age groups. It also fulfills the hunger pangs with this hot and spicy snack.
- Take eggplant of big size and cut into thin slices.
- Now in a bowl take chickpea flour, salt, ajwain, red chili powder, coriander powder, baking soda, water and mix it to make a thick batter.
- For stuffing take boiled and mashed potatoes, salt, pepper powder and mix it.
- For another kind of stuffing take sweetcorn and chop finely, in this add cheese, pepper powder and mix it thoroughly.
- Take the eggplant slice and wipe out the water then stuff this with potato stuffing and fold, then pin it with a toothpick and keep it aside.
- Again take another slice and stuff this with sweetcorn and again fold in the same way and pin it with the toothpick.
- Dip this rolled eggplant in the batter and deep fry in hot oil.
- Take them out on a tissue paper when they turn into golden color.
- Sprinkle chat masala and serve hot with any kind of sauce.
