Vendakai pachadi is prepared by frying the lady's finger till crisp. Served as a side dish with rice.
- In a hot pan add peppercorns, cumin seeds dry roast it slightly and keep it aside.
- Then transfer it in to a pestle to crush it with salt.
- In a pan add ghee, red chillies, curry leaves and saute it, then switch off the flame.
- Take a vessel and add cooked rice, crushed powder, ghee, roasted mixture to it and mix it nicely.
- Now sambar rice is ready.
For Pachadi:
- Take a small pan add oil, okra pieces, pinch of salt and saute it.
- When it is cooked then transfer into a plate.
- In the same pan add red chilies, mustard seeds, chana dal, urad dal, green chilies, curry leaves, pinch of turmeric powder and switch off the flame.
- Then add tomatoes, hing and salt.
- Transfer okra in to a bowl and add the roasted mixture, then add freshly grated coconut, coconut milk, yogurt and mix it nicely.
Now samba rice and vendakai thyir pachadi is ready to serve.
