- Cut ridge gourd and tomato into round slices and keep aside.
- Take medium size shrimp and clean them and keep aside.
- Heat oil in a pan, add shrimp, salt and saute it for 1 minute and keep aside.
- Heat little more oil in the same pan, add green chilies, onions, curry leaves and saute it.
- Add mint leaves, ridge gourd, turmeric powder, coriander powder, garam masala, green chili paste and saute it.
- Add coconut milk, basmati rice, water and mix nicely, check for seasoning.
- Place lid cook for until rice is 80 percent done.
- Arrange sauteed shrimp on top of rice and on it arrange tomato slices, cook it until it is done with the lid on it.
Now ridge gourd shrimp pulao is ready to serve.
