Hello all.... birakaya kura or ridge gourd curry this is the most simple but Delicious curry in our locality... my mom use to make this very frequently .. in this curry many combinations we can try like by adding drumsticks, chana daal , potato ya and of-course if u have all in single digit u can combined all these veggies also in your curry,but still its taste will be delicious. This recipe goes well with plain rice (with a drop of ghee ;) ) or chapathi...
1) Peel the ridge gourd and onions,cut into small or very small pieces. 2) Take a bowl and add ridge gourd pieces,red chilli powder,salt and turmeric. 3) Mix all together with your hand and make it little mushy. 4) Put a curry pan on stove (don't forget to light it ;) ) add oil. 5) When the oil is hot add chana daal,mustered seeds,black gram daal and jeera. 6) When mustered seeds starts fluttering then add curry leaves and our vegetable mixture. 7) Add some water to it and close the lid. Let it to cook for 20 minutes at least. Balance your salt and chilli powder at this point only. 8) When the water is completly avoperated then switch of the stove. 9) Now add milk(boild) to the curry, This prevents milk to split and ur curry becomes creamy and yummy 10) Serve hot with rice or chapati.
