Pumpkin bobbatlu are quick and easy south Indian sweets. Puran Poli is a flat sweet bread made with Jaggery and dal in Maharastra,Andhra, Tamilnadu,Karnataka,Gujarat and Goa
- Heat ghee in a pan, roast semolina until it is slightly coloured.
- To it, add grated pumpkin, cook it for around 5 minutes.
- Add sugar, cardamom powder and cook for 3-4 minutes until it form a single mass.
- Transfer into a plate and rest it, later make small dumpling or make round balls.
- Take a bowl, add all purpose flour, wheat flour, pinch of salt, 1 teaspoon of oil and mix nicely to make dough using water.
- Divide dough into small portions, make flat round shape on a polythene sheet using fingers then stuff the sweet ball mixture in middle and seal edges.
- Again make bobbatlu by pressing with fingers.
- Place bobbatlu on hot tawa and cook on both sides using oil.
Now Pumpkin Bobbatlu are ready to serve.
