Ingredients used in Mix Fruits Korma – Phaldari Korma
• Almonds, cut into two halves - 8 numbers.
• Cashew nut - 8 numbers.
• Millet seeds - 1 tablespoon.
• Poppy seeds - 1 tablespoon.
• Oil - 2 tablespoons.
• Cumin seeds - ½ tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Tomato puree - 2 tablespoons.
• Coriander powder - 1 tablespoon.
• Cumin powder - ½ tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Red chili powder - ½ tea spoon.
• Curd, whisked - 3 tablespoons.
• Cashew nuts, cut into two halves - 8 numbers.
• Phool makhana (lotus seeds) - 1/4 cup.
• Raisins - 1 tablespoon.
• Pineapple(pieces) - 6 pieces.
• Apples (pieces) - 1 number.
• Khoya(grated optional) - 1 tablespoon.
• Mint leaves(finely chopped) - 1 tablespoon.
• Pomegranate seeds - 1 tablespoon.
• Salt - to taste.
• Onions(fried to golden brown) - ½ cup.
• Whole garam masala - 10 grams.
• Bay leaf - 1 number.
Method:
  • In a pan add some water and boil. In these add almonds, millets seeds, cashew nuts, poppy seeds and boil for 15 minutes until they become soft.
  • Put in the blender, add some fried golden brown onions and make a paste and keep aside.
  • Heat oil in a pan, when it's hot, add whole garam masala and when they sizzle, add cumin seeds, ginger garlic paste, tomato puree, a paste of nuts, coriander powder, cuminpowder, turmeric powder, chilipowder.
  • Mix all the ingredients well and addwhisked curd and mix well.
  • Cover with lid and bring to boil for 25 minutes.
  • Heat butter in a pan and when it's hot, add few cashew nuts, Phool Makhana (lotus seeds), raisins, pineapples, apples, and the yellow gravy.
  • Cover the pan with a lid and simmer for 3-4 minutes. Adjust the seasoning at this time.
  • Add grated khoya (optional), chopped mint and gently mix and top with pomegranate seeds.

Serve with roomali roti.

The Phaldari korma has lots of influences from the Mughlai cuisine. It goes extremely well with hot roomali rotis.

Fruits are an essential part of our daily healthy diet as they are naturally low in calories, fat, sodium and cholesterol. They play an important role in keeping the body healthy. Generally most of the fruits have 90 to 95 percent water which is an important nutrient to the human body. Water is responsible for transporting nutrients around the body, regulates the body temperature, keeps the joints moist and getting rid of waste products in the body.

Recipe:  Phaldari Korma or Mix Fruits Korma

  1. For making the nut paste:
  2. Almonds, cut into two halves   -       6 to 8 nos
  3. Cashew nuts                                -       6 to 8 nos
  4. Millets                                          -       1 tbsp
  5. Poppy seeds                                -       1 tbsp
  6. Water                                            -       as require

For making the gravy:

  1. Oil                                                 -       1 tbsp
  2. Whole garam masala                -       few
  3. Cumin seeds                               -       ½ tsp
  4. Ginger garlic paste                    -       ½ tsp
  5. Tomato puree                             -       2 tbsp
  6. Coriander powder                     -       1 tsp
  7. Cumin powder                           -       ½ tsp
  8. Turmeric powder                      -       ¼ tsp
  9. Red chilli powder                      -       ½ tsp
  10. Curd, whisked                           -       2-3 tsp
  11. Cashew nuts, cut into 2 halves -       3-4 nos
  12. Phool Makhana (lotus seeds)   -       100 gms
  13. Raisins                                          -       1 tbsp
  14. Pineapple pieces                         -       6-8 nos
  15. Apples, cut into cubes               -       8-10 pcs
  16. Khoya, grated (optional)          -       1 tbsp
  17. Mint leaves, finely chopped     -       few
  18. Pomegranate seeds                    -       2-3 tbsp
  19. Salt                                                -       to taste
  20. Onions, fried to golden brown -       1 no

 

  1. In a pan, add some water and boil. Add almonds, millets, cashew nuts, poppy seeds and boil for 15 minutes or until they become soft. Remove, drain water and grind to a paste in the blender. Add some fried golden brown onions and make a paste and keep aside.
  2. Heat oil in a pan and when it gets hot, add whole garam masala. When they sizzle, add cumin seeds, ginger garlic paste, tomato puree, paste of nuts, coriander pd, cumin pd, turmeric, chilli pd and mix all ingredients well to make a nice yellow gravy.
  3. Add 2-3 tsp of whisked curd and mix. Cover the pan with a lid and bring to a boil for about 25 minutes.
  4. Heat butter in pan and when it becomes hot, add few cashew nuts, phool makhana, raisins, pineapples, apples and yellow gravy.
  5. Cover the pan with a lid and cook over simmer for about 3-4 minutes. Adjust the seasoning at this time.
  6. Add grated khoya, chopped mint and gently mix.
  7. Top it with pomegranate seeds.
  8. Serve with roomali roti, phulkas etc.

Thus we all need to encourage our kids in eating at least one fruit a day to keep them healthy. Most of the kids hate eating fruits; this dish is a brilliant variation of tempting your kids in eating a variety of fruits giving a twist in taste and flavour. Phaldari Korma is power packed with a variety of fruits, dry fruits, has a creamy and silky texture, looks rich and alluring and tastes extremely tantalizing to our taste buds. Phaldari Korma or Mix fruits korma will give a pleasing sweet, tangy and spicy taste.

As this dish originates from the Mughlai cuisine, it is often served with roomali roti. Do watch the video and enjoy preparing this dish.
