Ingredients used in CHICKEN CHOW MEIN
• Salt - to taste.
• White pepper powder - 1 tea spoon.
• Garlic (chopped) - 1 tea spoon.
• Ginger (chopped) - 1 tea spoon.
• Vinegar - 1 tea spoon.
• Bottle chilly sauce - 1 tablespoon.
• Oyster sauce - 1 tablespoon.
• Soya sauce - 1 tablespoon.
• Sugar - 1/2 tea spoon.
• Onion (slices) - 1 number.
• Chicken stock - 1/2 cup.
• Oil - 1 tablespoon.
• Noodles - 200 grams.
• Chicken - 100 grams.
• Carrot (slices) - 1/2 number.
• Capsicum (3 colores) slices - 1 cup.
• Cabbage - 1 cup.
• Spring onion green(chopped) - 1/4 cup.
• Sesame seeds - 1 tea spoon.
• Beans (slices) - 3 numbers.
Method:
  • Take one bowl to season the chicken first add pepper,salt, soya sauce(one or two drops) Mix it and keep it aside.
  • In a chicken stock add salt,sugar, pepper powder, soya sauce, oyster sauce, bottle chilly sauce,vinegar and mix it up.
  • Heat the oil in a large saucepan and add chicken, when chicken is cooked, add chopped ginger garlic and green,red, yellow capsicum, carrot, cabbage, spring onions, and add sauce mixture.
  • All vegetables and chicken well cooked add noodles and toss them, switch off the flame.

Now add spring onions and sesame seeds, serve it.

Chicken Chow Mein is an excellent Chinese noodle dish. The dish is nice, luscious and made with a mix of vegetables and noodles cooked together seasoned with a sauce mixture consisting of chicken stock, salt, sugar, pepper, soya sauce, oyster sauce, red chilli sauce and vinegar which gives an equal and even flavouring to the dish. Chow Mein Chow mein is typically a Chinese food that contains fried noodles.

 

There are many varieties having different names in certain locations. Chow mein dish consists of fried noodles (crispy or not) with vegetables, small pieces of meat, stir fried and covered with a soy-based gravy. The crispy version of chow mein noodles are made from egg noodles which have been fried and use a base for chow mein or crumbled as a topping over vegetables.

 

Traditionally, Chow mein often contains stir-fried vegetables and sometimes meat along with the noodles flavoured with soy sauce or some other flavouring is added. Generally before preparing the chow mein, the meat is also marinated in soy sauce, pepper and little salt which gives a nice flavouring and keeps the meat tender and juicy. Those who like more authentic flavours into the chow mein, can also add in some fish sauce and oyster sauce.

 

Every cuisine prepares the chow mein in their own style, giving a unique taste. But overall, the recipe is influenced from the Chinese cuisine. In India, chow mein was introduced by the Chinese who settled/ migrated in Kolkata. It is usually prepared with Hakka or with gravy. Vegetable Chow Mein is the Indian variant catering to most vegetarians that consists noodles with cabbage, colourful bell peppers, beans, carrots, onions and spring onions.

 

In New Delhi region, chow mein can sometimes include paneer with the mixture of noodles and vegetables. Meat used is mostly chicken. There are a lot of variations that you can give in making the noodles. Noodles are eaten hot or cold, steamed, stir-fried, deep fried, boiled or served in a soup. They are excellent source of protein and extremely high in complex carbohydrates. Often we are confused with the difference between a ‘lo mein’ and ‘chow mein noodles’.

 

There are two variations in preparing these recipes. In case of low mein, it involves tossing of boiled noodles in the wok and then mixing them with other ingredients during the final stage of cooking which helps the noodles to absorb more flavours from the sauce while cooking of Chow mein, the ingredients are stir-fried and then served over the noodles that have been prepared separately. Ultimately however it is cooked; we love eating noodles and are one of the most liked dishes by most of us, especially the kids. How to prepare Chicken Chow Mein:

Ingredients:

  1. Bottle chilli sauce                -           1 tbsp
  2. Cabbage                                -           1 cup
  3. Capsicum, 3 colours           -           1 cup
  4. Carrot                                     -           1 no
  5. Chicken                                 -           200 gms
  6. Chicken stock                       -           1 cup
  7. Garlic, chopped                    -           1 tsp
  8. Ginger, chopped                  -           1 tsp
  9. Noodles                                 -           250 gms
  10. Oil                                           -           2 tbsp
  11. Onions                                   -           1 no
  12. Oyster                                     -           1 tbsp
  13. Pepper powder                     -           1 tsp
  14. Salt                                         -           to taste
  15. Sesame seeds                      -           1 tsp
  16. Soya sauce                           -           1 tbsp
  17. Spring onions                       -           ½ cup
  18. Sugar                                     -           1 tsp
  19. Vinegar                                  -           1 tbsp

Directions:

Take a bowl to season the chicken first. Add pepper, salt, about 2 drops of soya sauce, mix and marinate the chicken and keep aside. To make the sauce take another bowl, add in the chicken stock, salt, sugar, pepper, soya sauce, oyster sauce, bottle chilli sauce, vinegar and mix well. Keep aside. Heat oil in a large sauce pan and add the marinated chicken pieces.

 

When the chicken is ¾ cooked, add chopped ginger, garlic and sliced green, red, yellow capsicums, carrots, cabbage, spring onions and the sauce mixture. Toss well and cook the vegetables and chicken together. Let not the vegetables becomes too soft. They need to be crunchy. Switch off the flame and sprinkle some spring onions and sesame seeds over and serve hot.
