Ingredients used in ANJEER MURG
• Figs - 7 no.
• Chicken - 250 grams.
• Lime juice - 1 no.
• Green chilies chopped - 3 no.
• Ginger garlic paste - 1 tea spoon.
• Salt - to taste.
• Hung yogurt - 2 tablespoons.
• Cashew nut powder - 1/4 cup.
• Chopped coriander leaves - 1 bunch.
• Onion - 1 no.
• Ghee - 3 tablespoons.
• Shahi jeera - 1/2 tea spoon.
• Onion paste - 3 teaspoons.
• Ginger paste - 1 tea spoon.
• Green chilli paste - 1 tablespoon.
• Coriander powder - 1 tablespoon.
• Cashew nut powder - 1 tea spoon.
• Saffron water - 1 tablespoon.
• Cream - 1/2 cup.
• Cardamom powder - 1/2 tablespoon.
• Coriander leaves - 1/2 bunch.
Method:
  • First soak figs in water for 3-4 hours.
  • Take a bowl add soaked figs, chicken pieces, some lime juice, finely chopped green chilli, chopped ginger and garlic, Salt, hung yogurt, ground cashew nut powder, chopped coriander mix all the ingredients well.
  • Add onion pieces which are cut into C shape.
  • Take a skewer Pierce the chicken and soaked fig on to the skewer pierce a onion piece. Repeat the process for all the chicken and fig pieces.
  • Heat ghee in a tawa and place the skewers and put the lid on and let it get cooked.
  • Rotate the skewer at regular intervals Meanwhile make a gravy by adding ghee in a pan and add shahi jeera when it comes to sizzle add boiled onion paste cook it for 2 -3 minutes.
  • Add salt, ginger paste, green chilli paste after it is cooked add coriander powder, water mix it well then add cashew nut powder, saffron water put the lid on let it boil.
  • When the gravy is ready add cream, cardamom powder. Remove the skewers from the tawa and place them in the gravy let it cook for 1 minute.
  • Garnish with coriander leaves.

Serve this with Naan or Romali roti.

Anjeer Murg, Chicken & Figs cooked in an amazingly scintillating and silky Mughlai style of gravy, this dish is mildly spiced yet has a notably mixed aroma and taste. The gravy is absolutely rich to taste, very flavorful and aromatic. It tastes extremely good eaten with any type of Indian leavened bread like naan, roomali roti, khameeri roti, chapatti, phulkas etc.

 

The chicken pieces are very succulent on bite and infused with an amalgamation of flavors from the ginger, garlic, cardamom pd, figs and spiced with green chillies. Anjeer Murg is a fantastic side-dish, rich Mughlai gravy, highly aromatic with pleasant taste of boiled figs lingering around the palate giving a notably amusing taste to the taste buds. Figs are often consumed in dry form and enjoyed on their own. It is also paired well with many other flavors and foods. The gravy is the highlight of this dish.

Recipe:  Anjeer Murg

Ingredients:

  1. Figs                                                                        -       6-8 nos
  2. Chicken, cut in cubes                                         -       250 gms
  3. Lime juice                                                             -       1 tbsp
  4. Green Chillies, finely chopped                         -       ½ tsp
  5. Garlic, finely chopped                                        -       ½  tsp
  6. Ginger, finely chopped                                       -       ½ tsp
  7. Salt                                                                         -       to taste
  8. Hung curd                                                            -       1 tbsp
  9. Ground Cashew nut powder                             -       1 tbsp
  10. Coriander leaves                                                  -       1 tbsp
  11. Onions, cut in big cubes                                     -       1 no
  12. Ghee                                                                       -       1 tbsp
  13. Shahi Jeera                                                           -       ½ tsp
  14. Boiled Onion paste                                              -       1 no (big)
  15. Ginger paste                                                          -       ½ tsp
  16. Green chilli paste                                                 -       1 tsp
  17. Water                                                                      -       as required
  18. Saffron strands (soaked in hot water)             -     few
  19. Coriander powder                                                -       1 tsp
  20. Cream                                                                     -       2 tbsp
  21. Cardamom powder                                              -       ½ tsp

Directions:

  1. In a bowl, soak few figs in water for 3-4 hours until they become soft. Drain the water and keep aside.
  2. Put the soft figs in a bowl, add in the chicken pieces, lime juice, salt to taste, finely chopped green chillies and garlic.
  3. Add hung curd, ground cashew nut powder, finely chopped coriander leaves and big sized onion cubes and mix all the ingredients well.
  4. Skewer one chicken and fig piece between two onion pieces, repeat until all are done.
  5. Add little ghee on a pan or grill and place the skewers and cook them covering with a lid until they get cooked and are slightly browned.
  6. Heat ghee in a pan, add shahi jeera and when they sizzle, add boiled onion paste, coriander powder, green chilli paste and ginger paste. Saute and cook well until you get a nice aroma.
  7. Add some coriander water, required water of water, mix well and cook for a while.
  8. Add fried cashew nut powder, saffron water (soak saffron strands in hot water), cover the pan with a lid and cook for a while.
  9. Once it is almost done, Stir in some cream and cardamom powder and mix well.
  10. Put in the skewers in the silky sauce and cover the pan and allow cooking for a minute.
  11. Remove the lid, garnish with finely chopped coriander leaves and switch off the flame.
  12. Serve hot with naan, roomali roti, khameeri roti, chapatti etc.

 

 Anjeer or Figs is used in making a variety of delicacies like Anjeer Halwa, Anjeer Burfi, Anjeer Kesar Kofta, Kaju Anjeer Milkshake etc.  Anjeer Murg, this dish is an absolute gastronomic delicacy by choice that makes you feel like a king while eating. Hey it would be nice if you could offer an alternative name to the indian ingredients, I love indian food but I have no idea what that white paste is for example. Looks like sour cream to me but I wouldnt know if I could use it instead. :) Thanks.?
