Nutritious kabab is a vegetable kabab recipe with boiled kabuli chana, potatoes and sprouts as the main ingredient. Relished with coriander and mint chutney.
- Take a bowl add refined flour, yeast, sugar, warm water and leave it.
- In a hot pan add oil, chopped garlic, kalonji seeds, red chili flakes and switch off the flame.
- Now add salt, roasted garlic, yogurt in to the bowl and make it a dough.
- Keep the dough in refrigerator for 40minutes.
- In a mixie jar add soaked chana, paneer and crush it.
- Then transfer into a bowl and add corn meal, salt, red chili powder, garam masala, amchoor powder, chopped ginger, chopped garlic, mint leaves, chopped onions and mix it nicely.
- The mixture will go on to the chopsticks then arrange it in a tray.
- Keep this tray in oven and cook it on highest temperature around 230 degrees in oven
- After 30-40minutes take out the mixture from refrigerator and roll it.
- Then keep zaitun, red chili flakes, kalonji, garlic, oil and crystal salt.
- Rest is for 20minutes.
- After 20min keep this in tray.
- Then keep this in oven and cook it around 12minutes.
- After 12 minutes take out the kulcha on a chopping board and cut into pieces.
- Apply butter to the kebab then remove it from chopsticks and transfer into serving plate.
Now paneer aur kabooli sheekh is ready to serve.
