This potato fry podimas(mashed potatoes) is a mildly flavored curry to go with hot and spicy sambar rice.
METHOD POTATO FRY:
- Boil and cut the potato pieces.
- Heat oil in a pan and fry the potato pieces on medium heat until it changes to golden brown in color and keep aside.
- Place the 1 spring curry leaves, coriander leaves, green chilies and dip in the hot oil pan and fry it and place it on fried potatoes.
- Sprinkle salt, red chilly powder and toss it.
- Now potato fry is ready to serve hot.

- Heat oil in a pan and add mustard seeds, red chilies, cumin seeds, channa dal, urad dal, cashew nuts and saute it.

- Add potato, coconut and cook it.
- At last, add lime juice and serve it.
