This is a popular street snack of Rajasthan also known as Jodhpuri Mirchi Vada. Green peppers stuffed with a masala aloo filling and deep fried.
- Slit green chillies, remove the seeds and keep aside.
- Take a bowl, add chickpea flour, cooking soda, carom seeds, salt, water and mix it to make smooth bajji batter.
- Heat 1 tablespoon oil in a pan, add chickpea flour, amchur powder, sugar, coriander powder, cumin powder, little salt and saute it.
- Transfer into a plate, add little water to make a paste, stuff this mixture in green chillies and keep aside.
- Take a bowl and add mashed potato, chopped coriander leaves, garam masala, corn flour, red chili powder, turmeric powder, salt and mix the potato mixture nicely.
- Take stuffed green chillies and coat potato mixture and dip in chickpea batter.
- Heat oil in a pan and deep fry it until golden brown in colour.
- Transfer into paper towel and cut into half.
Now mirchi vada is ready to serve hot with meethi chutney.
