A sweet Indian ice-cream made from milk, sugar, cardamom and with or without dry fruits on warm summer evenings.
- Heat pan, boil milk for 20-25 minutes until it reduced to half of its quantity, color is changed and malai is formed.
- Add cardamom powder, once it is reduced to 60 or 70 percent add sugar and boil it again until it is reduced by half and becomes thick consistency.
- Remove from flame, add saffron and pour into glass jar, allow it rest for some time.
- Once it is cool add whipping cream and mix nicely and pour it into kulfi moulds and place lid, keep it on a plate.
- Insert thin stick and keep in the freezer for about 5 hours.
- Now demould into a plate and serve it cool.
