Lemon bars have a crisp and crumbly shortbread crust that is topped with a deliciously tangy lemon filling. It has the texture of a firm cake or softer than usual cookie.
- In a bowl, add eggs, lemon zest and whisk it
- Add 3 tbs sugar, lime juice, pinch of salt and whisk it nicely.
- In another bowl, add all purpose flour, sugar and mix it.
- Add butter and mix slightly, transfer into greased baking tray as a layer.
- Press it nicely with hand and bake at 180 ºC for 15 minutes.
- Remove from oven and spread egg mixture on its top and bake it again for 15 minutes.
- Allow it to rest and cut into pieces.
Now lemon bar is ready to serve.
