Jain gravy is a dish made without onions, ginger or garlic but is a simple and creamy dish made delicious and can be used as gravy to any vegetable or Channa etc.
- Grate pumpkin,bottle gourd and keep it aside.
- Blend cashewnuts in blender and keep it aside too.
- Take a pan add oil,garam masala spices, grated pumpkin, bottle gourd, salt, red chili powder, saute it till it become brown or cook for 5 minutes then add red chili powder,coriander powder,salt,cumin powder,cashew nuts paste cook for 2 minutes.
- Then add tomato paste and cook till tomatoes are tender.
- Then add oil, water as required cook it for 5 minutes till the gravy is thicker.
- Later, add boiled beans,paneer, any vegetables as required mix well and then add garam masala powder,koya ( optional )coriander leaves mix well.
- serve it hot with roti.
