Halwa is everybody's favourite dish in winters. It is probably one of India's most popular dessert that can be crowned to be National Dessert of India.
For halwa:
- In a hot pan add ghee and grated carrots to saute it, simmer it with milk.
- Now add half cup sugar and leave it to cook till you get a thick mixture.
- Now for kheer take another pan add ghee, cashew nuts and saute it then add raisins and switch off the flame, after that transfer in to a small bowl.
- In the same pan add vermicelli and roast it till you see golden brown color.
- Then add milk and simmer it till the kheer becomes thick.
- When the kheer becomes thick add sugar and cook it.
- Then add khoya, cardamom powder in both the dishes.
For wrappers:
- Take a bowl add refined flour, cornstarch, salt, milk, water, mix it in a thin consistency.
- In a hot pan add little drop of oil then pour the wrappers batter and again pour back the batter in the same bowl.
- Once the sides are coming out then transfer on chopping board.
- Repeat the process for all the wrappers on a high flame.
- Place the cooked wrappers one by one on the chopping board.
- Now add the halwa, kheer and sauteed nuts mixture on wrappers, then apply flour slurry on edges and fold it one by one.
- Then roll it like spring rolls.
- In a hot oil deep fry the spring rolls.
- In a plate add desiccated coconut powder, castor sugar, cinnamon powder and mix it.
- Now coat the spring rolls and cut it into pieces.
- For plating take mango puree, then add finely chopped tutti-frutti and place the spring rolls on it.
Now the halwa kheer spring rolls is ready.
