Mutton with sorrel leaves is all time favorite mutton dish. Gongura is very rich in iron, vitamins and folic acid. It has anti-oxidants essential for human body.
- Heat little ghee & oil in a pan, add black cumin seeds, dagad phool, onions, ginger garlic paste, green chilies and saute it.
- Add turmeric powder, green chili paste, coriander powder, cumin powder, red chili powder, sorrel leaves, a little salt and saute it later cook it.
- To it add tomatoes, coconut milk, coriander leaves, mint leaves, garam masala and mix it.
- Add mutton marinated with raw papaya overnight and cook it. Boil water with little salt in another pan and add basmati rice and cook it till it is 80% done.
- Arrange rice on top of mutton mixture and sprinkle fried onions.
- Place the lid with rim covered with wheat dough and cook it for 20- 25 minutes.
Now the gongura mutton biryani is ready to serve.
