- Heat a pan add coriander seeds, cumin seeds, urad dal, chana dal, red chilies, roast this and put it in the blender and make a masala powder.
- Heat oil in a pan add mustard seeds, cumin seeds, red chilies, asafoetida, curry leaves, onions (optional), turmeric powder, chopped tomatoes, eggplant pieces, salt, tamarind juice, put the lid on and cook this till raw flavor is gone.
- Add moong dal, carrot (boiled), masala powder, water add sugar, mix this once come to a boil and cook it for 5 minutes.
- Add chopped coriander leaves and switch off the flame.
