A very simple and tasty dish Dahi Baigan Ka Salan. Salan is a term which denotes to a spicy gravy made with peanuts.
- Dry roast peanuts, sesame seeds, desiccated coconut powder till they turn light brown in color, grind them to finepaste using water and transfer to a plate.
- Heat oil in a pan, add mustard seeds, dry red chilies, cumin seeds, fenugreek seeds, chopped onion, curry leaves, turmeric powder, salt and give it a mix.
- Then add ginger garlic paste, chopped mint leaves, coriander powder, red chili powder, prepared peanut paste along with a cup of water and cook till the oil floats on top of curry surface.
- In the same pan, add slited brinjal pieces, curd and cook well.
- Then add grated jaggery, and cook with closed lid for about 2 minutes.
- At last, add chopped coriander leaves to the same pan.
Dahi Baigan Ka Salan is now ready to serve.
